Fontainebleau Las Vegas hosts Michelin-starred La Barbecue for NFR week

Deep in the heart of Central Texas, La Barbecue is smoking the competition. The Austin staple, led by renowned pitmaster Alison Clem, originally opened in 2012 as a food truck. It’s since graduated to a fantastic brick-and-mortar restaurant—and with the Michelin star to match.  

Known for its slow-smoked Texas-style ’cue and unique creations like the loaded Frito pie and pulled pork sandwich (La Frito Loco), La Barbecue hits the spot, and now it’s hitting Fontainebleau. For NFR week, the barbecue spot is taking over The Tavern for an exclusive pop-up through December 14. Reservations can be made at fontainebleaulasveas.com.  

Think of the experience as la Barbecue’s greatest hits but for the rodeo. Chef Clem breaks out the $75 Texas Trinity Plate, which serves two, for this pop-up. There’s the smoked brisket, so succulent and tender you can pull it apart with a fork. The bark on the sides also has a nice, smoky and savory char. La Barbecue’s jalapeno links have a satisfying snap to them. They’re plump and juicy, the kind that takes a cowboy back to those nights camping with just a crackling fire, some sausages on the grill and a bedroll to sleep out in the breeze. And then you’ve got the pulled pork, which is a mound of spice and flavor. Whether it’s drizzled in barbecue sauce or smothered in house-made garlic pickles, this one’s a winner.  

Of course, no barbecue is complete without its sides. La Barbecue’s shell macaroni and cheese takes you back to the comfort of the South. Chef Clem also deploys a tart, mustard-heavy potato salad to cut through all that other barbecue sweetness. Double down on the savory with a cocktail ($21). Pickle brine gives a vodka martini a kick with spurs. Cowfolk can also play it safe with a spicy margarita or Ranch Water with Código blanco tequila (one of George Strait’s favorites).  

La Barbecue has been touting this pop-up as a “10-day flavor celebration” for rodeo week. They sure know how to rope a gal in.
