Las Vegas doesn’t have a reputation for sentimentality. This is a city that would rather implode a landmark than renovate it — always hungry for what’s next, what’s bigger, what glows brighter. But against the odds (and the wrecking ball), a handful of classic restaurants and bars have endured — and still serve food and drinks worth showing up for. That includes old-school Italian joints like Bootlegger Bistro and Piero’s, as well as romantic relics like Hugo’s Cellar, where salads and cherries jubilee roll out on roving carts, and Michael’s Gourmet Room, a velvet-wrapped time capsule of tableside flair.
