Seafood Palace Carbone Riviera Finally Has an Opening Date at the Bellagio

The group behind Carbone — home of the famous spicy rigatoni vodka and one of Las Vegas’s toughest reservations — is opening a new seafood restaurant at the Bellagio this fall. Carbone Riviera will debut on November 7 in the former Picasso space with a dining room overlooking Bellagio’s iconic fountains; reservations will be available starting October 9. Carbone initially expanded to Las Vegas in 2015 with a location in the Aria that channels the same old-school Italian feeling as the original in New York.

Carbone Riviera comes from a partnership between MGM Resorts International and Major Food Group co-founders Mario Carbone, Jeff Zalaznick, and Rich Torrisi. The menu will center around a whole fish program presented tableside, including salt-baked branzino and grilled Dover sole. Diners can also look forward to a two-pound lobster fettuccine with spicy tomato sauce and rich lobster stock; spicy lobster meatballs; and, of course, the spicy rigatoni vodka. 

Carbone Riviera isn’t the only new development at the Bellagio. For the first time, the hotel is offering mini-yacht tours of Lago di Como, which cruise around the fountain show for an up-close view. When Carbone Riviera opens, it will join other fountainside restaurants at the Bellagio, including Wolfgang Puck’s Spago and Le Cirque.
