Pro tips for cooking a perfect steak on the grill

, but for now, savor these tips from Munster for grilling the perfect steak. 

Are you a grill virgin?

Start out with a gas grill (instead of charcoal or wood) so you can control the heat. Use your senses, a hand, to find the hot spots and set up places on your grill for high heat and low heat so you can move your food around as needed.

Use the best products.

Costco meats are great because they buy their meat at cost— good value for good quality. Look for flecks of fat and marbling in your meat. Choose Prime (which is best) and Choice (also good) over Select in the grocery store.

Salt and taste your food like a chef.

Salt gets people to salivate. Home cooks often do not salt enough or taste their food enough. Keep disposable spoons nearby to taste constantly through the cooking process and don’t be afraid of salt.

Season your grill.

Use a neutral oil, like avocado, that won’t smoke and will keep your food from sticking.

Learn about the Maillard reaction.

Proteins and sugars interacting with heat creates complex flavors and a caramelized umami bomb of a golden, crunchy crust. Get that crust!

Rest the meat.

Give your steak a nap. Allowing it to sit for 10 minutes or so lets the juices reincorporate for more tenderness.

Cut your meat against the grain.

This is an easy one. If you cut with the grain, you will have chewy meat.

Focus on what’s important.

Don’t worry about cross marks. They don’t help the steak. Don’t worry about plating. Let the food go where it goes. Don’t worry about a set mealtime. Keep the vibe relaxed. If you mess up, keep going.It doesn’t matter and mostly no one will notice. If you are smiling and laughing, your guests are smiling and laughing.
