The innovative Edo Tapas & Wine is set to close this fall

When someone finally writes the definitive book about the history of dining in Las Vegas (maybe we should do it?) there will be a chapter about Edo.

Veterans of casino fine-dining institutions Le Cirque and Bazaar Meat, Oscar Amador and Robert Liendo opened Edo Tapas & Wine in a small space in Chinatown in 2018, a wildly creative, Barcelona-inspired restaurant that wowed locals and tourists from the jump. Although Vegas already had some great Spanish food, this was uniquely next-level, a chef-driven experience we assumed could only be had in a pricey Strip destination. Its cool neighborhood location (just 35 seats) set a new standard, as did joy-inducing flourishes like the gin and tonic cart, the Iberico de Bellota program and the Green Tartare with pistachio vinaigrette.

Now it’s time for a new evolution. Edo will serve its last meal in September, closing for a full refresh in order to become a new concept. The company also operates the equally acclaimed Anima at the Gramercy and is readying Braseria on Paradise Road, which should open this year.

That adds up to a lot of excitement from some of the dining scene’s brightest stars, but right now it’s time to get back into Edo one more time.

“Edo has been the story of my career so far, from Spain and El Bulli to Las Vegas and Le Cirque,” Amador said in a statement. “We are looking forward to seeing all of the guests that have built Edo with us and helped us open Anima in the Southwest, as I get ready for another chapter in this space.”
